fired up the indirect smoker early this morning, Cook\smoking 9 lb pork shoulder, having friends over for some BBQ this evening. Started off with charcoal, then red oak for good coals then hickory for that hickory smoky flavor. Were looking 8 to 9 hrs cook time, between unwrapped & wrapped.
progress on my pork shoulder is coming along. Talked with an old friend years back over the phone (1st time since the late 70's). He was a team mate on the high school rodeo team.

5 hrs to go or the internal temp of 185 degrees F. I like cooking my shoulders @ 220 degrees, 4 hrs uncovered 4 hrs wrapped. I like that look of a dark “bark” crusty exterior reddish smoke ring 1\4" or so just under the surface of that shoulder. Moist smoky flavor but tasting that seasoned pork.

4hrs on the smoker @ 225 uncovered, 3 1\2 hrs covered 7 1\2 hrs total cooking time with the internal temperature of 185 degrees. Great bark on the outside along with moist tender with smoke belt. fabulous! absolutely fabulous! Time for pulling. Homemade BBQ Sauce in the pan.
This pork shoulder will be the main ingredients of bbq spaghetti. Yup, bbq spaghetti, if you never had bbq spaghetti you do not know what your miss'n. All I can say its fantastic and a favorite of ours & our friends.
