one of my fav's is BBQ'n.
Last week-end done 2 large turkey breast. Cooked them over oak. Doesn't get any better than that. The Perfect BBQ Blower Fan http://theperfectdraft.com/ cooked these turkey breast perfectly & faster than normal. Please look at Mr. Steve's fine addition to the BBQ Industries. This piece of equipment removes temperature fluxuation, excess CO2, much cleaner burn, meaning you can use up less wood, and your food ends up tasting better. Sally's Blue Cheese Bacon Potato salad was spot on.

JUly 9th of this year, BBQ'n Bacon wrapped boneless pork loin roast. I can strut sitting down, it was that good.

I trimmed up the pork loin, seasoned with my all purpose pork rub, wrapped with 12 pieces of bacon, season again with my Cajun rub, I placed this on my BBQ pit cooking over red oak & hickory @ 235 degrees with until a internal temperature of 155 with a 15 minute rest period.

Super moist, super flavorful, & the bacon cooked all the way throughout. WOW!
Sally's pasta salad just added the touch to this meal.

4th of July, rain all day, with cool weather. This is our 1st year here in Arkansas that Sally & I didnt have our traditional 4th of July "Mad Minute". We have always celebrated the 4th of July with several firearm on a folding table all fully loaded AR15's, AK's, HK's, for one solid minute firing non stop. Over 300 plus rounds fired. Instead we sat on the back deck having a few cocktails watching the rain & talked about future camping trips in 2018 with the expedition trailer build I've been working on.
I BBQ'd a Beef Tri Tip, the last time i cooked one was over 10 yrs I had to say it came out pretty dadgum good.

June 25th, relaxed today, BBQ'd 3 whole chickens over red oak & pecan for 3 3\4 hrs @ 235 degrees. The Perfect Draft BBQ Blower fan work flawlessly as usual keeping exact temperature. We pulled all the meat from the carcass for future meals , like chicken salad, chicken soup, chicken enchiladas, chicken gumbo, BBQ pulled chicken sandwiches like we had for supper this evening. Awesome!, moist & flavor able, with that nice pecan smoke to the meat.

June 18, Sally wanted me to make my BBQ beef short ribs. She made potato parsnip mash, nice green salad & coconut cream pie. The beef short ribs I BBQ'd over red oak & mesquite for 2 hours, then placed them in a braising liquid with red wine, beef broth, tomato paste, carrot, onion, celery, garlic, rosemary, & bay leaf then covered them & placed them in the BBQ pit for 2 more hours. Wow! they were awesome, moist, tender & delicious.

June 11 BBQ chicken with Alabama white BBQ sauce, mac & cheese with BBQ'd pulled pork, Arkansas style green beans, cole slaw, & Texas style BBQ beans with BBQ'd beef brisket.
 Our friends always say..."you go to Don & Sally's for supper, you never leave hungry. You always eat large."
 for any of you who never had "Arkansas Style Green Beans", you have no idea what your missing.

June 3, My hard work has prevailed. BBQ beef brisket, stuff BBQ pulled pork baked potato, Texas style BBQ beans (homemade), green salad & dessert; homemade peach ice cream.

The stuffed BBQ baked potatoes had, butter, shredded cheese, BBQ pulled pork, BBQ sauce, sour cream & chopped green onions.

The beef brisket I season only with cracked coarse black pepper, garlic powder, white pepper, Kosher salt & dried parsley.
The brisket was super tender & moist. Awesome bark on the outside of this brisket with tons of flavor.

May 23 got up real early to BBQ a 7 1\2lb boston pork butt to make BBQ spaghetti for the church pot luck tomorrow. 10 hour cook over charcoal, red oak & hickory @ 225 degrees. Sally & I made some homemade BBQ sauce for the spaghetti. We'll be taking to church pot luck tomorrow 2 1\2lbs BBQ pulled pork, 1lbs cooked spaghetti noodles, 2 cups of homemade BBQ sauce.
 The ribs are for our supper tonight, well maybe a small sampler of the BBQ spaghetti too. If you never had BBQ spaghetti you have NO idea what your missing, its latterly to die for. the ribs were perfect, cooked just right. No slippage off the bone, just only were you bite from & clean w\o meat left behind, perfect moist, flavorful beautiful BBQ rib.

here some venisons brats (homemade) with, dill pickles, BBQ sauce, BBQ pulled pork, topped with creamy cole slaw. All in that order.

today I BBQ'd some beef ribs for 3 1\4 hours @ 235 degree's over red oak. I seasoned them with salt & course black pepper. The last 1\2 hour I glazed them with a homemade peach BBQ sauce. These were tender & moist. Cooked perfectly they bite threw & clean to the bone just like a perfectly BBQ'd pork rib.
 Sally made a creamy cucumber, onion, tomato salad & a black berry cobbler.
